CALIFUZE: FULL SERVICE CATERING


​​$25* per person. Minimum 30 persons.
Our Califuze Tacos and Bowls Service includes 3 hours of full on site service, 4 step station table set up, service with staff, disposable plates, bowls, utensils and to go containers.
All menu items are CUSTOM build for each guest and everyone will get to enjoy up to two full servings.
With the addition of drinks and appetizers, we’ll provide an additional serving station with all the provisions to serve those menu items including ice, drink dispensers, cups, serving utensils, signs, etc. 

BASE

​Fresh Pressed Corn Tortillas - Our masa is hand pressed and comal cooked. The perfect base for our fusion tacos.
Flour Tortillas - Super thin and chewy, Sonoran-style flour tortillas. Another base for our fusion tacos.
​Fuze Rice Blend - A steamed blend of jasmine fragrant rice, calrose rice, herbs and spices.
Califuze Red Rice - Inspired by the classic Spanish/Mexican Rice. We steam white rice in our saffron, tomato, garlic and onion broth mix. 
Sofrito Black Beans - Sofrito Black Beans are a flavorful and aromatic dish that combines creamy black beans with a rich blend of sautéed onions, garlic, and bell peppers. 
Fresh Greens Salad - A classic choice for unique bowls. This salad includes a mix of tender baby greens such as chard, spinach, arugula, and lettuce.
Grilled Chimichurri Zucchini & Bell Peppers - Seasoned with our chimichurri spice blend and charred over open flames until tender.
Roasted Broccoli & Carrots - Tender roasted broccoli and carrots, caramelized to perfection with a naturally sweet, savory flavor.
Roasted Baby Potatoes - Roasted and tossed in our secret savory and tangy potato rub.
Umami Noodles - Thin spaghetti noodles tossed in our umami rich garlic and chive butter oil. Finished with a spritz of calamansi juice. ​

Red Oak Wood Santa Maria Tri-Tip Beef - Prime Grade USDA Tri-Tip Beef. Red Oak Smoked. Santa Maria Style Rub.
Hickory Smoked BBQ Brisket -Hickory smoked, low and slow, BBQ brisket beef. Seasoned with our garlic rosemary spice blend.
Smoked Birria de Res - Smoky, tender chuck roast slow-cooked in rich birria spices, creating deep, bold flavors.
Apple Wood Mango Adobo Chicken - Chicken marinated in our signature mango adobo rub and flame grilled over apple wood.
Flame Grilled Citrus & Herb Chicken - Marinated with fresh herbs and lemon then grilled over an Apple wood fire. Juicy, tender, citrus protein that goes with great with everything.
Cherry Wood Smoked Pork Belly Sisig - Pork belly trimmed and marinated in a Memphis Inspired Rub. Smoked to tender perfection then chopped and sauteed in our Filipino Influenced Sisig sauce.
Memphis Inspired Pulled Pork - Pork shoulder slathered in Memphis inspired rub and smoked over Cherry Wood. Cooked till tender and hand shredded to deliciousness. 
Flame Grilled Salmon - Our baked salmon is a flavorful seafood dish that combines the rich, savory taste of salmon with the tangy, slightly sweet flavor of our honey-tamarind marinade. 
Flame Grilled Aioli Shrimp - Large shrimps tossed in citrus, garlic and paprika aioli and flame grilled to perfection. 
Vegan: Grilled Bulgogi Tofu - Flame Grilled. Firm Tofu. Basted with a Bulgogi Sauce Blend.
Vegan: Al Pastor - This plant-based twist on the traditional Mexican dish uses soy protein marinated in chiles, garlic, orange juice, pineapples and herbs.

​Cilantro Slaw - Fresh chopped cabbage, cilantro & shredded carrots. 
Pickled Red Onions - We pickle our thin sliced red onions in the perfect balance of whole peppers, garlic, oregano, sugar and red wine vinegar.
Sweet Corn Salad - Sweet corn kernels touched with spices and herbs.
Tomato Cucumber Salad - Diced tomatoes and fresh cut cucumbers tossed in our herb and spice blend.
Shredded Cheese - Chihuahua, Mexico-style cheese is mild, creamy, and perfectly meltable.
Cali-Crunch Mix - Crunchy rice noodles, chopped garlic and shallots are a texture and flavor bomb.

SIGNATURE SAUCES

​Lemon Yum Sauce - Creamy lemon and garlic aioli. "Fuzed" with secret asian flavors. Not Spicy.
Avocado Sauce - Creamy avocado with big notes of tomatillo, cilantro and lime. Mild.
Sriracha Chipotle Sauce - Chipotle peppers marinated in Sriracha sauce then blended with fresh herbs, spices and a creamy aioli.
Cali-Boom Sauce - California navel oranges, chili peppers and roasted vegetables blended to make this fusion fire sauce. SPICY.

ADDITIONAL INFO YOU SHOULD KNOW...

DEPOSIT & SCHEDULE OF PAYMENTS 
A deposit payment of 50% of the catering total is required to reserve your date/time. This deposit is refundable up to fourteen (14) days prior to your event date.  
The final payment is due one (1) day prior to the event date. Payments may be made in the form of zelle, venmo, cash, personal check, cashier’s/bank check or credit cards.
The schedule of payments is confirmed at the time of booking, and may be different than the example above based on the booking and event date.
Payments made by credit card or debit card are subject to a 3.5% surcharge of the total amount to cover the fees associated with credit card usage.
​CANCELLATION POLICY
​The initial 50% deposit for your event is refundable (before 14 days of the event) and will be retained by Califuze Catering should you choose to cancel the event.
All cancellations must be made in writing (email/text) and submitted to Califuze Catering.
The following fees apply to cancelled events:
If you cancel, 14 Days or more in advance: 100% of the deposit is refunded.
If you cancel, 13 Days or less: 100% of the deposit is retained.
​FINAL GUARANTEE OF GUESTS
​The final guarantee of guests attending your event is due fourteen (14) days prior to the event date, along with the final payment of your invoice. Should the final number of guests not be received fourteen (14) days in advance, the original contracted number of guests will be the basis of billing and you will be held to this number and required to pay based on the original number of estimated guests.
TASTINGS
​Tastings for Califuze Catering are led by our Executive Chef. Tastings are offered every two to three months throughout the year and are generally held in Rancho Cucamonga.
Tastings offer a diverse selection of appetizers, side dishes and main entrées. If there is any appetizer, entrée or specialty menu item you would like to inquire about, our Executive Chef would be more than happy to discuss those options with you and provide these items at the tasting. A tasting is scheduled after booking and provides a complimentary experience for up to four total guests from each party. You may participate in a tasting prior to booking our services, however, a $25 per guest charge will apply for the tasting and must be paid in advance of the tasting date to secure your space. Once your event is confirmed, the charges for the tasting will be deducted from the total cost of your catering price.
​SERVICE CHARGE, TAX & GRATUITIES
Our service charge of 25% and any applicable tax apply to the behind-the-scenes costs, such as staff wages, setup, cleanup, equipment, and coordination.
Gratuities are not mandatory, but greatly appreciated and will be evenly divided among the serving staff if given.
